This caviar takes worthy a place in the lower price range. Its advantage is not in its appearance. The sterlatka caviar seems sometimes to be soft. The grains are small and very sensitive. But its taste is really convincing: pungent, expressive, mild and not salty. Almost like the sevruga caviar! The sterlatka caviar can be pasteurized very well. The soft grain becomes firmer without negatively affecting the taste.
